Paneer / Tofu Satay recipe

Ingredients

  • Paneer / Tofu: 200gms
  • Thai Red Curry Paste: 2tbsp
  • Coconut Milk: 6tbs
  • Fresh Red chilli: 2
  • Oil: 30ml
  • Lemon Grass : 1
  • Lemon Leaf: 2
  • Glangal: 1 small
  • Coriander: 5gms
  • Lemon: 1
  • Salt: To taste

Method

  • Mix all the ingredients together in a bowl except the paneer / tofu.
  • Cut the paneer / tofu inti � inch thick finger shape.
  • Now put the ready mixture of step 1 over the paneer / tofu fingers and mix well. check for seasoning and let it marinate for 1 hour.
  • Put the marinated fingers on individual stay stick or a long toothpick.
  • Cook on a grill and baste with oil. When cooked remove from grill and serve hot on a sizzling plate along with peanut sauce.

Peanut sauce

Ingredients

  • Coconut milk: 1cup
  • Peanut : 1/4cup
  • Red curry paste: 1tbs
  • Lemon leaf: 02-03
  • Coriander: 5gms
  • Galangal: 2gms
  • Fresh red chilli: 2-03nos
  • Salt: To taste

Method

  • Blend the above ingredients together till smooth.
  • Heat the pan and put oil add the above paste into it and reduce it till it is a thick coating
  • consistency.

Ingredients

  • Chopped carrots: 20gms
  • Chopped beans: 20gms
  • Green peas crushed: 20gms
  • Home grown sprouts: 100gms
  • Cottage cheese grated: 30gms
  • Oats powder: 40gms
  • Cumin: 5gms
  • Ginger chopped: 5gms
  • Green chill chopped: 5gms
  • Salt: as required
  • Hing: as required
  • Peanut oil: for shallow fry/20ml
  • Fresh coriander chopped: few sprigs

Method

  • In a pan put peanut oil. Add cumin, Ginger, Green chillies, hing and Saute well
  • Add carrot, beans, peas and saut� well till tender.
  • Add Turmeric, saute and remove from flame and cool it in a plate.
  • Mix together mixture, cottage cheese, oats powder and salt and chopped coriander.
  • Divide in small portions as desired and give shape, dust with oats powder.
  • In frying pan shallow fry cutlets with peanut oil till golden brown from both sides and become crisp.
  • Serve with mint chutney, tomato ketchup.

The summer has is upon us and with its sweltering heat wave, and all we can fancy is a cooling drink that will soothe our body and mind.

Jal Jeera

A popular traditional Indian beverage bursting with strong flavours. Serve chilled to bring down soaring summer temperatures! It has a rejuvenating and cooling effect, and is considered to be good for digestion as well.

Ingredients:

1 fistful coriander leaves

1 fistful mint leaves

5 ml ginger juice

15 ml lime juice

� tsp pepper

1 tsp tamarind

2 tsp roasted cumin powder

Boondi (Crisp and fried gram flour tiny balls) as per requirement

300 ml water

Method:

Add coriander, mint, ginger and lime in a blender, add a little water and grind to make a smooth puree. Transfer the puree into glass bowl. Add remaining ingredients and mix well. Serve chilled.

Panna

Aam Panna is a much celebrated summer cooler in north India and in some parts of South India like Hyderabad. It is made from unripe mangoes. It is healthy, seasonal and easy to make at home. The taste is palate friendly (and children should be encouraged to drink this rather than aerated beverages or those with excessive preservatives). It is rich in Iron and Vitamin C; and hence, builds immunity and works well as a natural iron booster. Aam panna has plenty of heat resistant properties and is best consumed during the intense summer months.

Ingredients:

1 unripe mango

2 tbsp powdered sugar

� tbsp black salt

� tbsp black pepper powder

5/6 mint leaves crushed

� tbsp roasted cumin seed powder

1 glass chilled water

Ice cubes

 

Masala Chaas / Buttermilk

Masala chaas, is one of the oldest healthy drinks that is known by many different names in different parts of India. Traditional chaas is wonderful as a digestion as it contains more lactic acid than milk. It is loaded with probiotics which is very important for our health.

Ingredients:

1 cup yoghurt

2 cup cold water

2 green chili (add as per taste/ preference)

� cup cilantro

� inch piece ginger

� tsp roasted cumin powder

� tsp chaat masala

Pinch of salt

Method

Combine all ingredients in blender and blend to smooth consistency. Serve right away sprinkled with little bit more cumin powder. Serve chilled.

The Virgin Sangria

Sangria is traditionally made with wine, but, here we have an innovative version that is a combination of juices. It is both refreshing and healthy and should be served as a chilled summer beverage.

Ingredients:

� cup cranberry juice

� cup apple juice

30 ml honey syrup

15 ml lime juice

� cup sparkling water

� cup Strawberries, Blackberries and Raspberries

Lime wedges and Mint sprigs

Method:

Combine all ingredients into a small pitcher. Stir to perfection to combine. Pour it in glass and add fruits. Serve with garnish mint sprigs on top.

 

Raspberry Hibiscus Ice Tea

Recipe:

240 ml Water

5 gram loose hibiscus tea

5 pieces raspberry

5 large mint leaves

2 table spoon honey

Pour loose hibiscus tea into pitcher and set aside. Bring water to boil. Once boiling, remove from heat and pour it over the loose tea. Add raspberry, mint, and honey and let tea steep for 15 minutes. Pour tea through a fine strainer in separate pitcher and place it in refrigerator until its cold. Search engine giant Google on Monday launched Grow with Google OnAir that will help impart free digital skills training to everyone in the US and Canada for the first time.

The in-person ‘Grow with Google’ was launched in 2017 to help Americans get the digital skills they need to succeed.

To date, the Grow with Google programme has trained more than 4 million Americans on digital skills.

“Though we’re no longer able to gather in person, that doesn’t mean the learning has to stop. So we’re announcing virtual programmes from Grow with Google that can help,” Jesse Haines, Director, Grow with Google said in a statement.

CHEESY ITALIANO MAGGI NOODLES

Ingredients

1 pack MAGGI Noodles

1 Tablespoon Olive oil

1 teaspoon grated garlic

� green capsicum chopped

� red capsicum chopped

� yellow capsicum chopped

1-2 tablespoon cheese spread

2 basil leaves chopped

Method

Just heat the oil and fry the garlic in it for about a minute. Then, toss in the basil leaves and fry them for another minute. Add all the capsicums, saut� for a couple of minutes and switch off the gas. Drop in the cheese spread and mix well

Heat the oil in a wok and saut� the onion until they are soft and light brown. Add tomato and green chilies, saute till the tomatoes have softened

MAGGI BIRYANI NOODLES

Ingredients

6 packs of MAGGI Noodles

2 tablespoon oil

4 green cardamom

8 cloves

3 medium onion finely chopped

2 teaspoon ginger garlic paste

1 teaspoon red chilli powder

6 cups vegetables (carrot, beans, cauliflower) approx. 500 gms chopped

1 cup peas

Salt, to taste

Coriander leaves � cup chopped

Mint leaves � cup chopped

2 cinnamon 1 inch piece

3 medium tomatoes finely chopped

� cup fried onions (optional)

Method

Heat oil in a pan. Add the green cardamom, cinnamon and cloves. Then add the onions and garlics and saut� till brown, add ginger-garlic paste and saut� for 5 min. Add the tomatoes and cook till they are soft.

Add the red chili powder, coriander powder and saunf powder and fry for a minute. Add the chopped vegetables and peas and cook till tender. Add salt to taste

Cook the MAGGI 2-minute noodles as per the pack instructions. In a serving dish, put half the cooked MAGGI noodles, then put half the cooked vegetables. Put the remaining MAGGI noodles and serve hot garnished with coriander leaves, mint leaves and fried onions

VEGGIE DELIGHT MAGGI NOODLES

Ingredients

1 pack MAGGI Noodles

1 Tablespoon Oil

6 garlic cloves, crushed

1 teaspoon black cardamom crushed

1 carrot cut into thin juliennes

1 cup broccoli, small florets

1 cup baby corn

1 cup sliced spring onion

250 ml water

Salt, to taste

Method

Heat the oil, add garlic and saut� till fragrant. Add black pepper and vegetables and stir fry till tender yet crunchy. Add salt to taste

Cook the MAGGI 2-minute noodles as per the pack instructions and add the egg bhurji preparation. Mix well

Serve hot
